About the wine…

Once harvested, our winemakers then begin the fermentation process by soaking the grapes for 8 days on skins in rotor fermenters. Thereafter, they are transferred into new 100% French oak barrels, which promotes the infusion of superb flavours into the wine. This full-bodied, deep red wine is filled with the delicious aromas of dark fruit with liquorice undertones. On the palate, this wine exhibits a balanced tannin structure with the delicious flavour of blackberries and hints of herbaceous freshness.

Best served with a hearty game, beef or lamb dish, this rich Cabernet Sauvignon 2018 vintage will peak in flavour from mid-2021 through to 2031, when the tertiary aromas begin to evolve.

The vines used for harvesting are grown in a low rainfall climate with a dry ripening season and cooler evenings. They are then picked as smaller berries with excellent colour and flavour intensity during dry weather and are only harvested at optimal phenolic ripeness.

Our dedicated winemakers offer an unwavering passion to produce only the best Cabernet Sauvignon for our Stellenbosch 1679 range. This award-winning wine is produced from well-aged vines grown in decomposed granite, Oakleaf and Tukulu soils in Stellenbosch, located in South Africa.
